AKwan’s Kitchen: How To Make Ginger Snow Cookies

In this episode, we are revisiting the holidays and showing you how to make cute and delicious ginger snow cookies! Spicy!

Outtakes and behind-the-scenes:

– 1 cup shortening
– granulated/powdered sugar (for dusting)
– 1 1/2 cups brown sugar (for dough)
– 5 1/2 cups flour
– 1 1/2 tsp baking powder
– 1 tsp baking soda
– 3/4 cup molasses
– 1 tbsp. ground cinnamon
– 1 tsp. ground nutmeg
– 1/4 cup honey
– 2 eggs
– ground ginger
– pinch of salt
*** SECRET INGREDIENT!!! *** Captain Morgan spiced rum

0.) Preheat oven to 350 degrees F.
1.) Combine dry ingredients (flour, baking powder, baking soda, ground ginger, cinnamon, nutmeg, salt) in a bowl. Set aside.
2.) In a separate bowl, cream shortening+water with the brown sugar together. Add the rum.
3.) Mix until smooth.
4.) Add in molasses and honey and then mix again.
5.) Add in dry ingredients from earlier into bowl.
6.) Add in the two eggs.
7.) Mix thoroughly until no lumps remain and smooth.
8.) Take the dough out and roll flat with a rolling pin on a floured surface.
9.) Cut out shapes using cookie cutter (if desired) or if making ginger snow caps, roll into moderate-sized balls and flatten the top with the back of a fork.
10.) Place on greased baking pan (or on parchment paper).
11.) Bake in oven for 20 minutes at 350 deg. F.
12.) Take out of the oven when done and lightly dust over the top of them with powdered sugar.

Now sit by the fireplace and enjoy some delicious ginger snow cookies with a glass of eggnog, spiced rum, or hot chocolate in the cold winter season. Nom nom nom!
