AKwan’s Kitchen: How To Make Stuffed Peppers/Eggplant/Tofu

Stuffed peppers/eggplant/tofu are all common dishes in Chinese dimsum. In this episode, we attempt to try our hands at making them.

– Bell peppers (any color is fine)
– Eggplant
– Tofu
– Ground pork
– Fish paste (you can probably find this at any Asian market)
– Soy sauce
– Corn starch
– Sugar
– White pepper
– Oyster sauce
– Cooking wine

1.) Marinate the ground pork with soy sauce, sugar, corn starch, and white pepper.
2.) Combine pork with fish paste in a bowl.
3.) Before stuffing, dust sliced vegetables with corn starch to enhance sticking.
4a.) To stuff eggplants: put filling on top of one slice and put another slice on top of it.
4b.) To stuff peppers: just put filling into the inside of the pepper.
4c.) To stuff tofu: first, scrape a little hole on the surface of the tofu. Then add filling into the hole.
5.) Now, you can pan-fry them until thoroughly cooked.

To make the sauce:
1.) Combine corn starch and cold water.
2.) Add sugar.
3.) Pour into a heated pan.
4.) Add oyster sauce.
5.) Add cooking wine.
6.) Stir.
7.) And then drizzle over the stuffed vegetables. Mmm nom nom nom!
