In commemoration of Hawaii becoming a United State this week, learn how to make a staple Hawaiian dish–the loco moco–here in “AKwan’s Kitchen,” with our own version of brown gravy, complete with mushrooms and onions. Loco moco consists of a brown gravy smothering over a fried egg on top a hamburger patty, all served over white rice.

Loco moco is a staple Hawaiian dish that consists of a brown gravy smothering over a fried egg over a hamburger patty, and all served over white rice.

- 1/2 lb ground beef
- 3 cloves garlic minced
- 1/8 large onion diced
- 4 oz white mushrooms
- 1/2 large onion sliced
- 1/2 can chicken broth
- 1 tbsp soy sauce
- 2 tsp honey
- 1 egg large
- In a bowl, combine the ground beef and minced garlic and diced onions together.
- Using your hands, take about 1/2 of the mixture and form it into a ball and then flatten into a shape of a patty; add a little thumb print to the center of the patty.
- Add a little oil into a shallow frying pan.
- Crack egg into pan and fry to your liking; remove and set aside.
- Add more oil into pan, if needed and then add patties when hot.
- Season the tops of the patties with a little bit of salt and pepper.
- Cook the bottom of the patties until a nice crust forms, about 2 minutes.
- Flip and cook the other side, also about 2 minutes.
- Salt and pepper the already crusted side as well.
- When done, remove patties and set aside for later.
- In the same frying pan, add some more oil, if needed.
- Add in the sliced onion and stir fry until translucent and fragrant.
- Add in the mushrooms and let them cook until soft.
- Pour in the chicken broth, soy sauce, and honey; bring the pan back to a boil.
- Add in a cornstarch slurry to thicken the mixture. If still runny, add more slurry or let it cook down some more to thicken to your liking.
- Scoop out a bowl of white rice onto a plate.
- Carefully add the hamburger patty on top of the rice.
- Add the fried egg on top of the patty.
- Pour the gravy, along with the mushrooms and onions, on top of everything else.
