AKwan’s Kitchen: How to Make Loco Moco

In commemoration of Hawaii becoming a United State this week, learn how to make a staple Hawaiian dish–the loco moco–here in “AKwan’s Kitchen,” with our own version of brown gravy, complete with mushrooms and onions. Loco moco consists of a brown gravy smothering over a fried egg on top a hamburger patty, all served over white rice.

Ingredients
Hamburger patty
Brown gravy

Instructions
Prep and form the hamburger patty
  1. In a bowl, combine the ground beef and minced garlic and diced onions together.
  2. Using your hands, take about 1/2 of the mixture and form it into a ball and then flatten into a shape of a patty; add a little thumb print to the center of the patty.
Frying the egg and patty
  1. Add a little oil into a shallow frying pan.
  2. Crack egg into pan and fry to your liking; remove and set aside.
  3. Add more oil into pan, if needed and then add patties when hot.
  4. Season the tops of the patties with a little bit of salt and pepper.
  5. Cook the bottom of the patties until a nice crust forms, about 2 minutes.
  6. Flip and cook the other side, also about 2 minutes.
  7. Salt and pepper the already crusted side as well.
  8. When done, remove patties and set aside for later.
Making the gravy
  1. In the same frying pan, add some more oil, if needed.
  2. Add in the sliced onion and stir fry until translucent and fragrant.
  3. Add in the mushrooms and let them cook until soft.
  4. Pour in the chicken broth, soy sauce, and honey; bring the pan back to a boil.
  5. Add in a cornstarch slurry to thicken the mixture. If still runny, add more slurry or let it cook down some more to thicken to your liking.
Assembling the loco moco
  1. Scoop out a bowl of white rice onto a plate.
  2. Carefully add the hamburger patty on top of the rice.
  3. Add the fried egg on top of the patty.
  4. Pour the gravy, along with the mushrooms and onions, on top of everything else.
