AKwan’s Kitchen: How To Make Japanese Cold Noodles and Dashi

Japanese cold noodles is the perfect dish for those hot summer days when you do not feel like slaving over a hot stove cooking a cumbersome and elaborate meal. For this, you will also need Japanese dashi so learn how to make it here first and then you can use it to make all sorts of other Japanese dishes as well, like miso soup and cold noodles dipping sauce, which we are going to show you here in “AKwan’s Kitchen.”

Ingredients
Dashi
  • 4 sheets kombu also known as dried kelp
  • 1 handful bonito flakes which is just dried, shaved fish flakes
Cold noodle dipping sauce

Instructions
Making the dashi
  1. Place the kombu in a pot with about 2 cups of cold water.
  2. Slowly heat the pot but do not bring it to a boil or else the kombu will get bitter and slimy.
  3. Take out the kombu when small bubbles begin to rise to the surface.
  4. Next, place a handful of bonito flakes into the pot and let it simmer for a minute or two
  5. Drain the bonito flakes out and set aside the dashi; you can also freeze the dashi for future use.
Making the cold noodle dipping sauce
  1. In a pot, combine 1 cup of dashi with the soy sauce, mirin, sake, and sugar.
  2. Let it boil for a minute or two, then remove from heat.
  3. When it reaches room temperature, cover and let it chill in the fridge.
Main Instructions
  1. Boil the noodles per the package instructions.
  2. Transfer the noodles into a bowl of cold water.
  3. Let the noodles chill in there for a bit.
  4. Drain the noodles and serve them on a plate or bowl.
  5. You can add some chopped scallions into the dipping sauce.
  6. Pick up some noodles with chopsticks and dip it directly into the dipping sauce and out to eat.
