AKwan’s Kitchen: How To Make Pho (Pho Bo)

This week we’re back and we’re teaching you how to make a classic Vietnamese dish–pho! To be more exact, pho bo aka pho with beef! Nom nom nom!

Ingredients: *makes about 8 moderate-sized bowls*
For broth
– 1 lb beef bones (preferably still with marrow)
– 1 lb beef chuck (cut up into cubes or chunks)
– 1 tbsp fish sauce
– 2 medium-sized onions or 1 large onion
– 1 daikon radish (peel and cut into big pieces)
– 1 piece rock sugar
– 1-inch piece ginger root
– 5-6 pieces of star anise
– 1 cinnamon stick
– 5-6 whole cloves
– 1 1/2 tbsp salt

For noodles
– banh pho noodles (either fresh or dried)
– raw eye of round, sirloin, beef balls
– cilantro
– scallions

For garnish
– basil leaves
– bean sprouts
– lime wedges

Preparing the broth
1.) Take either 1 medium onion or slice large onion in half and start charring it over stove; if you have a gas stove, just hold it over the open flame until the skin blackens. Repeat with ginger.
2.) Rinse onion and ginger under warm water and remove blackened skin.
3.) Parboil beef bones in some water for about 2-3 minutes, to remove the impurities.
4.) Drain the water and rinse beef bones under warm water.
5.) Add beef bones back into a pot of 6 qt. of fresh water.
6.) Let it come to a boil and start adding the other ingredients.
7.) Reduce heat to a simmer and cook uncovered for at least 3 hours; the more you cook it, the more the broth will be infused with flavor.
8.) While simmering, constantly use a strainer to remove any gunk from the top layer of the broth.
9.) After the 1 1/2 hour mark, take the beef chuck chunks out of the broth and let them sit in some cold water for about 10 minutes so they will stop cooking. After, cover and refrigerate until used.

1.) Quickly blanch the noodles in some boiling water for 10-20 seconds. Drain and put in a bowl.
2.) Slice eye of round pieces and put into bowl, raw. Add in any other meat as desired, like the beef chuck from earlier or beef balls.
3.) Add in cilantro, scallions, and sliced onions, if so desired.
4.) While broth is at a rolling boil, ladle some soup into the bowl so that the meat will get cooked by it.
5.) Add in any of the garnish if desired, and enjoy! Mmm nom nom nom.
