This is a re-creation of Tasty Memories khao man gai recipe for her giveaway contest, with my own twist to it. Khao man gai is a traditional Thai dish that resembles that of the Chinese Hainanese chicken and rice dish, except spicier. Also, check out Jen’s food blog at Just Eat Life.

Outtakes and behind-the-scenes:
– chicken (thighs or breast)
– 3 cups of chicken broth
– soy sauce
– chili pepper
– fish sauce
1.) Mince garlic and ginger.
2.) Brown garlic and ginger in a pan with some oil.
3.) Add chicken in skin side down.
4.) Salt and pepper the top side first.
5.) When bottom side starts to brown, flip chicken over and salt and pepper and brown the other side now too.
6.) When both sides are brown, add in some Thai basil leaves. (Careful: they’ll pop when placed in oil!)
7.) Add 1 cup of chicken broth into pan.
8.) Squeeze in some lime juice if desired.
9.) Cover and let simmer for 10-15 minutes or when chicken is cooked completely through.
10.) While chicken is cooking, prepare chicken-flavored rice.
11.) Wash rice normally.
12.) Instead of using water, add chicken broth into rice instead. (Tip: 1 cup of rice = 1 cup of chicken broth/water).
13.) Add 2 slices of ginger, minced garlic, and a stalk of lemongrass into rice.
14.) Cook in pot or rice cooker.
15.) To prepare the sauce for the chicken, cut up some chili peppers, scallions, and lemongrass.
16.) In a pan, heat up some regular soy sauce and sweet soy sauce.
17.) Add chili peppers, scallions, and lemongrass into pan.
18.) Add some vinegar and fish sauce.
19.) Stir it around for a bit until the sauce gets hot.
20.) Slice up chicken and serve with chicken-flavored rice with sauce poured on top. Enjoy. Nom nom nom!
