AKwan’s Kitchen: How To Make Vitasoy Muffins

Vitasoy, for those of you who don’t know, is most famous for their high-protein soybean-based drink. It is based out of Hong Kong and it started out to be popular there before exploding internationally. In this episode, we use it as one of our ingredients for our “mini” muffins.

**NOTE: The original recipe’s measurements were in metric, but we have converted some of them to U.S. down below**

Ingredients (serves 12):
– 200 mL of Vitasoy drink
– flour
– 1 tsp. baking powder
– 2 eggs
– 11 tbsp. sugar
– pinch of salt
– 1 tsp. vanilla extract
– 100 mL of vegetable oil

1.) Sift the flour, baking powder, sugar, and salt all together in a bowl. Set aside.
2.) Then, put the 2 eggs, Vitasoy, vanilla extract, and vegetable oil into a mixing bowl.
3.) Mix accordingly with a hand mixer.
4.) After thoroughly mixed, pour batter into pregreased (or use muffin sheets) muffin pan.
5.) When 356°F preheated oven is ready, put muffins in.
6.) Bake for 25 minutes.

And there you go! In about 25 minutes, you should have some nomnomnom-alicious Vitasoy-flavored muffins! Enjoy!
